Slacker Sunday..

LOL
I've slacked off on the blog..
Oops!!
Between not feeling well, trying to keep up with our planned activities & trying to finish up some work I have going on, I've not been in the blogging mood.
But, alas, today I will play catch-up!!

Friday, I made a yummy, yummy pumpkin pie.
I'd been craving one for a little while and figured, why not?!!
So I made it--& it was good!
I used the same recipe I've been using since I started baking them,
ya know,
the one on the back of the can of pumpkin puree!
HAHAHA!!
Just in case though, I'll share it with you ;)

•Libby's Pumpkin Pie•

3/4 cup granulated sugar
1 teaspoon ground cinnamon

1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
2 large eggs
1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin
1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
1 unbaked 9-inch (4-cup volume) deep-dish pie shell
Whipped cream (optional)
MIX sugar, cinnamon, salt, ginger and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk.
POUR into pie shell.
BAKE in preheated 425°F. oven for 15 minutes. Reduce temperature to 350°F.; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. Top with whipped cream before serving.
Cooks Note: 1-3/4 teaspoons pumpkin spice may be substituted for the cinnamon, ginger and cloves; however, the taste will be slightly different. Do not freeze, as this will cause the crust to separate from the filling.
FOR 2 SHALLOW PIES: substitute two 9-inch (2-cup volume) pie shells. Bake in preheated 425°F. oven for 15 minutes. Reduce temperature to 350°F.; bake for 20 to 30 minutes or until pies test done.
FOR HIGH ALTITUDE BAKING (3,500 to 6,000 ft.): Deep-dish pie - extend second bake time to 55 to 60 minutes. Shallow pies - no change.
Estimated Times: Preparation - 15 minutes; Cooking - 55 minutes; Cooling Time - 2 hours cooling.
Yields 8 servings.

Saturday we spent the day with scarecrows!
I love scarecrows...Like...LOVE them!!
IDK what it is about 'em but...I think they're pretty awesome.
We checked out our local "scarecrow trail" at one of the nature parks here in our town.
It wasn't as great as I was hoping for--There weren't as many scarecrows as I thought there'd be...
But, it was still a good time.
They did have some cute ones up.

I was pleasantly surprised to see Katniss on our little walk in the woods LOL
I had to laugh at a girl that thought she was supposed to be Laura Croft.
LOL

After walking the trails & checking out the scarecrows here, we went a couple towns over
& checked out some more scarecrows.

It was also a beautiful day to just check out the Fall colors!!
Things sure are getting pretty out there!

Our Fall is in full swing now & we are having a great time enjoying all the fun, festivities & family time!
